Smoked Almond Kale Salad

 A friend of mine made this Kale salad and I couldn't stop thinking about it weeks later. KALE.. ME... Craving KALE! Who knew. 

2 shallots, thinly Sliced

5 TBS sherry vinegar

2 TBS honey

8 TBS extra-virgin olive oil, divided

Ground black pepper

4 Oz white bread 

2 tsp fresh thyme leaves

1 TBS sweet Paprika 

2-3 bunches lacinato Kale, stemmed, washed, spun dry, and thinnly sliced

1 c lightly packed fresh mint leaves

In a small bowl wisk togther 2 Shallots, thinly Sliced, 5 TBS sherry vinegar and 1/2 tsp salt. Let sit for 5v mins. Whisk in 2 Tbs of honey 5 TBS oil and 1/2 tsp pepper, set aside. 

In food processor, Process the 1 cup almonds until coarsely chopped. Transfer to large bowl.  

Add 4 oz bread to food processor and process to rough crumbs and add 2 TBS fresh thyme, 3 TBS of oil, 1 TBS paprika, and process until incorporated (10 seconds)

Transfer crum mixeter to large skillet over medium heat and cook until crisp and browned, 8-10 muns. Transfer to plate and cool.

Add the Kale and mint to the bowl with the almonds and massage the greens until the Kale sofetns and darkens.


Add the dressing and crumbs and toss to combine.
