Adapted from Food Network. 4 garlic cloves, minced1 jalapeno, minced (optional)1 large handful fresh cilantro leaves, finely choppedKosher salt 2 limes, juiced1 orange, juiced (I am lazy and use frozen concentrate)2 tablespoons white vinegar1/2 cup olive oilAdd all ingredients to a food processor or blender and blend until cilantro is fine (but not juiced because gross). 2 lbs flat iron steak, cut into small cubes Pour Marinade over cubed steak and let marinate for a couple of hours. Heat oil in a cast-iron skillet and scoop mostly drained cubed steak into hot pan. cook until all liquid has gone and the orange and lime juice slightly caramelize on the beef. Serve on mini tortillas, heated. (Either corn or flour.)Top with queso fresco, onion salsa, and Mexican Cream. Onion salsa: 1 medium onion1/4 cup cilantro 1 tbs olive oilJuice of 1 lime salt to taste (Kosher if you have it) Finely chop onion and cilantro. Add olive oil, lime and salt.
