Artichoke chicken Soup

I got this recipe from Ronnie in Louisiana. I could have sworn I posted it already. It is one of my favorite soups EVER. I make it every Christmas Eve now. You wont be disappointed with this.

1 Onion, minced

2 Stalks of celery, chopped fine

1/2 C butter

2-3 TBS cajun spice

1/2 C flour

6 cups chicken stock

1 can cream of chicken soup
4 cups water
4-5 chicken breast- chopped
1 tbls thyme cook until chicken is done
3 or 4 cans artichokes, water and all
1 pint heavy cream
1/4 to 1/2 c plain fine bread crumbs if needs to be thickened

Saute onion and celery in one stick of butter, add 2-3 tsp of Cajun spice. Stir for a minute till onion is tender. Add flour and cook to get flour taste out, but not brown. Add chicken stock and stir. Add cream of chicken soup and water. Add chicken breast add thyme cook until chicken is done. Stir in artichoke and heavy cream. If it is too watery you might want to add 1/2 c plain fine bread crumbs if needs to be thickened.

Best if refrigerated overnight and reheated.
