Blackened Chicken

Blackened Chicken
(You will want to open all the windows for this one and be prepared to fan the smoke detectors. This is SOOO yummy! Worth all the smoke!)

1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
¾ tsp white pepper
¾ tsp black pepper
½ tsp salt
½ tsp thyme
½ tsp oregano

Butter or oil for pan frying
4 Chicken breast (thinner breast cook more evenly)


1. Preheat oven to 350 degrees F (175 degrees C). Mix together paprika, salt, cayenne, cumin, thyme, white pepper, and onion powder. Rub one side of chicken breasts with spice mixture.
2. Heat oil in a cast iron skillet over high heat for 5 minutes.
3. Place chicken in hot pan, seasoned side down, and cook for 1-2 minute. Turn, and cook 1-2 minute on other side. (don't turn chicken more than necessary) Place breasts on a lightly greased cookie sheet.
4. Bake in preheated oven for 5 to 10 minutes, or until no longer pink and juices run clear..
