Sweet Potato Soufflé

Cassorle: 4 cups mashed sweet potatoes (or 2 large cans)
1 cup sugar
¼ cup sweetened condensed milk
2 eggs
1 tsp vanilla ½ cup butter
Cinnamon Topping: 1 cup pecans
1 cup brown sugar
½ cup flour ½ cup butter Mix ingredients for casserole.S poon into buttered 13x9 casserole dish
Topping: Mix brown sugar & flour, then cut in butter and pecans.
Sprinkle topping over sweet potato mixture. Bake at 350 for at least 20 minutes or until bubbly *NOTE: To cook the sweet potatoes, fill a large pot with water and put the sweet potatoes in; turn on stove to HIGH. Once the water comes to a boil, turn down heat and let boil with lid on for 30-35 minutes or until tender when pricked with a fork. Once they cool a little it should be easy to peel them.
