Nan (Indian flatbread)
(I use this for Gyro’s.. YUMMY!! )

½ C yogurt
½ C milk
½ tsp baking soda
1 tsp sugar
4 Tbs butter
2 eggs, beaten
2 Tbs dry yeast
3 C flour (half wheat/ half white)
½ tsp salt

Combine the yougurt and milk in a pan and wamr to “baby milk temperature”. Remove from heat, add the baking soda, butter, sugar, eggs, and dry yeast. Mix thoroughly. IN a separate bowl, combine the flours and the salt. Gradually add the flour to the yogurt mixture, mixing it thoroughly. Knead for 5-10 minutes, let rise until double. Divide dough into 8 pieces. Roll out each piece 10” diameter, cover with cloth and let sit for 20 minutes.
Heat griddle very hot, place one piece on the griddle until it bubbles, then flip and cook the other side. Repeat with remaining dough.
