Cajun Fried Shrimp

Cajun Fried Shrimp
(Oh my! My mouth is watering just typing this! Must have! Must make today!)

2 lb large shrimp
1 ½ tsp Cajun spice (I like Seafood Magic & Tony’s)
2 cups canola oil for frying
½ cup buttermik
½ cup mik
2 large eggs
1 ½ C yellow cornmeal
1 ½ Call-purpose flour
½ tsp salt
Lemon to garnish

Peel shrimp leaving tail and one section of shell on shrimp. de-vein shrimp by slicing them halfway through the back and remove vein. Rinse shrimp after de-veining. (better yet, buy the peeled and deveined with tails on..Costco’s are best) Beat eggs and milk together. Add buttermilk. Mix well. combine yellow cornmeal and flour. Coat shrimp with Cajun spice. Dip shrimp in egg and milk mixture. Bread shrimp with cornmeal and flour mixture. Heat canola oil in medium frying pan. When oil reaches 350 degrees, fry shrimp for about 3 to 5 minutes until golden brown.

Just dress with Mayo, shredded lettuce, tomatoes, and Pickles…. Serve with a side of fried pickles.
